Gluten Free Cooking

Apple Muffins

I started out on a mission this morning! At sunrise I decided to give it a whirl at making some gluten-free apple muffins.

Sunrise Colors That Inspired Me!

I used the recipe from the Bob’s Red Mill Website.

The Brazilian apples here are small, so I grated two instead of one. I grated one with the peeling and one without the peeling. The recipe called for oatmeal. Since I did not have any, I crushed up some corn flakes for a little texture.

Sometimes it is fun to start out with a recipe and tweak it to your kitchen and what is available.

Life is a lot like cooking! You take what is available and make the best of it. You might even surprise yourself by how well things go with a little optimism and diligence and adding in a bit of this or that to create something special!

Don’t Be Afraid To Experiment With The Recipe!

Psalms 34:8

“O taste and see that the LORD is good: blessed is the man that trusteth in him.”

King James Version (KJV)

At breakfast, we all enjoyed the muffins today. Every day there are new experiences and opportunities waiting for us to enjoy if we will only look for them. I hope that not only in cooking, but also in all the details of your daily walk with God you will be able to express yourself in creative and interesting ways that bring joy and fulfillment to you!
